摘要:本课题对徐州市售膨化食品重金属铅、铬、镉污染进行了细致的研究。分别用干法灰化、湿法消解、微波消解等方法对原料进行预处理,比较它们的优缺点,最后选用微波消解进行样品处理,用石墨炉原子吸收分光光度计测量,得到徐州市售膨化食品重金属含量,再进行比较确定污染状况,制定科学有效的治理方案。 实验表明,采用微波消解法处理,实验数据显示主食类中的烧饼和煎饼这两种食品铅的含量有所超标;油茶类和军用食品类的情况比较良好;糕点类中大体情况还算可以,只有部分铅含量少量超标;小食品类的问题比较严重,普遍食品的铅含量超标,其中原味蛋糕干铅含量严重超标,为0.310mg/kg,超标1.55倍,还有少数膨化食品中的镉含量少量超标。因此对膨化食品安全性问题要倍加重视。 关键词 膨化食品;微波消解;重金属;原子吸收
Abstract:This topic of xuzhou city sell puffed food heavy metal lead, chromium, cadmium pollution has carried on the detailed research. With dry ashing, wet digestion and microwave digestion method for raw material pretreatment, compare their advantages and disadvantages, finally choose microwave digestion for sample processing, measured with graphite furnace atomic absorption spectrophotometer, get xuzhou puffed food heavy metal content, and are compared to determine the pollution situation, make scientific and effective management. Experiment indicates that, used microwave digestion law processing, experiment data displayed staple class in the of cake and pancakes this two species food lead of content has exceeded; tea class and military food class of situation comparison good; pastries class in the general situation also is can, only part lead content few exceeded; small food class of problem comparison serious, general food of lead content exceeded, which flavor cake dry lead content serious exceeded, for 0.310mg/kg, exceeded 1.55 times, also has minority expanded food in the of cadmium content few exceeded.
