摘要:以粉碎的金银花为原料,采用水浴浸提法对金银花浸提。浸提的工艺条件为:1:40的料液比,在80℃水浴中,每次浸提20min。以乳酸菌发酵金银花,分别采用了Fenton反应,TBA法和铁氰化钾还原法研究了乳酸菌发酵金银花的羟基自由基清除能力、抑制脂质氧化能力以及还原能力。接种量为0.5ml、1ml、2ml、4ml、6ml,随着接种量的变化,羟基自由基清除能力,抑制脂质氧化能力以及还原能力不断变化,在接种量为4ml时抗氧化性最好。发酵温度为38℃、40℃、42℃、44℃,在发酵温度为42℃时,抗氧化活性最好。发酵时间为3h、6h、9h、12h,随着发酵时间的变化,在发酵时间为12h时抗氧化活性最好。

Abstract:Crushed honeysuckle as raw material, the extraction of water extraction method honeysuckle. The optimum conditions for the extraction: solid-liquid ratio of 1:40, in 80 ° C water bath for each extraction 20min. Lactic acid bacteria fermentation honeysuckle, respectively, using the Fenton reaction, TBA method and potassium ferricyanide reduction of lactic acid bacteria fermented honeysuckle hydroxyl radical scavenging ability to inhibit lipid oxidation and reduction ability. The inoculation amount for 0.5ml, 1ml, 2ml, 4ml, 6ml, along with the inoculation volume changes, a hydroxyl radical scavenging ability, inhibition of lipid oxidation ability and reducing ability to vary continuously, and oxidation resistance is preferably in the amount of inoculation 4ml. The fermentation temperature is 38 ℃, 40 ℃, 42 ℃, 44 ℃, when the fermentation temperature of 42 ° C, the antioxidant activity best. The fermentation time is 3h, 6h, 9h, 12h, fermentation time 12h best antioxidant activity.
